If its good enough for Disneyland…

We’ve recently rediscovered the pleasure of a savoury filled croissant as an alternative to a conventional sandwich.

Having sampled a toasted cheese and ham croissant while on holiday, we’ve been making these tasty lunch time snacks at home too.

I found this photograph Flickr with the caption: “Sunshine Seasons is a counter service in the lower level of The Land at Walt Disney World’s EPCOT…..Bacon, Scrambled Eggs and cheese on a hot croissant …”

Seems that savoury filled croissants are enjoyed in some pretty popular places. And they can easily be made at home.

(Note: Marc’s croissants freeze well and are quick to defrost. We keep some in the freezer for quick meals – something that proved really handy as an alternative when we run out of bread)

Lemon Meringue Icecream – a summer favourite

Judy Oswald has sent us her favourite summer recipe:


1 Jar of good quality lemon curd
1 pint double cream (whip to soft peaks)
1 packet bougt meringues, nests or shells are fine.

After whipping the cream fold in the lemon curd.

Crush the meringues and stir into the mixture.

Freeze in an ice cream tub or similar.

No stiring is needed during freezing as the air expands into the meringue.

Delicious with summer berries.

Pecan Meringue Pie

16 Saltcrax biscuits (crushed)

2/3 of a cup of Pecan Nuts (broken/chopped)

3 eggs

1 cup of sugar

1 teaspoon of baking powder

Beat the eggs, sugar and baking power together until they are stiff.

Then mix all of the ingredients together in a baking pan and cook at 300F (150C) for approximately 30 minutes.

Wait for the pie to cool and then serve!  (Delicious with a bit of cream or icecream)

Cool Whittlewomen

Whittlewomen will be meeting at 26 Station Road on Tuesday 17th March at 8pm. The speaker this month is from the British Antarctic Survey and the subject is ‘Research in the Antarctic’.

Newt Night

On Friday 20th March the Whittlesford Society is organising a walk around the various village ponds to observe and gather information regading our ‘famous’ Great Crested Newts. the evening will end at Rayners Farm Barn with soup and lively conversation. Please ring Ashley Arbon on (01223) 833 054 to confirm the starting time and place. Remember to bring a torch

Mother’s Day Cake Sale

William Westley School will again be holding their Mother’s Day cake sale outside Masseys of Whittlesford – the village shop. The sale is due to start at 9.00am on Saturday 21st March and all proceeds will go to the school. Hopefully all cakes go to the mums.

Mother’s Day

Just for the record, it seems that to be correct Sunday 22nd March (this year) is celebrated as ‘Mothering Sunday’ here in the UK, honouring motherhood – its roots in religion. The term Mother’s Day, the holiday celebrated in th Canada and the USA , however is the result of the campaiging of an American woman – Anna Marie Jarvis – who is now accepted as the founder of ‘Mother’s Day’ . 5 minute chocolate mug cake

Jane Simmonds sent us this recipe today and naturally, it had to be tested in the Engauge offices immediately!

And it is a winner… Trouble is, now that we know that we can make cake in the microwave in a mug in 5 minutes flat, it won’t just be Cake Fridays in our office. Its more likely to be Cake Everyday.

Five-Minute Chocolate Mug Cake

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil(1 tbls = 20g fat)
3 tablespoons chocolate chips (optional)
a small splash of good vanilla
1 large coffee mug


Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (optional) and vanilla, and mix again.


Put your mug in the microwave and cook for 3 minutes on high.
The cake will rise over the top of the mug, but don’t be alarmed!


Allow to cool a little, and tip out onto a plate if desired.


EAT! (this can serve 2 if you want to feel slightly more virtuous).

Now all you have to do is – tuck in and enjoy!
(By the way, we discovered that its rather good with a scoop of Choc Chip icecream – and we’re considering really pushing the boat out and adding a few chunks of chocolate next time)
